Meal Prep Shrimp Bowl

This Meal Prep Shrimp bowl is perfect for a quick lunch or dinner on the go. Shrimp is a great source of protein to incorporate into your meal prep dish. You will also enjoy the delicious side dishes rice, beans, corn, and salsa!


Ingredients:

  • 20 medium sized shrimp (peeled/deveined)
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1/2 tsp ground cumin
  • ½ tsp chili powder
  • 1/4 tsp  onion powder optional
  • 1/4 tsp kosher salt
  • 2 cups cooked brown rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn drained and rinsed
  • 1 cup tomatoes diced
  • 1/2 cup cheddar cheese
  • 2 tbsp cilantro minced
  • 1 lime cut into 4 slices



 

Instructions:

  1. In a medium sized bowl whisk together olive oil, chili and onion powders, garlic, cumin, and salt. Add in shrimp and toss to coat evenly. Cover and refrigerate for 10 minutes.
  2. In a large skillet heat on high for 2 minutes. Add the olive oil and shrimp to the pan. Cook the shrimp on medium-high heat until pink and cooked thoroughly, about 5 minutes.
  3. Follow cooking instructions for brown rice or rice of choice
  4. In your meal prep container add rice, 4-5 pieces of shrimp, a scoop of corn,  black beans, tomatoes, garnish with cheese, and cilantro. Drizzle with lime juice, or add guacamole. (optional)
  5. Enjoy!
