Meal Prep Shrimp Bowl
This Meal Prep Shrimp bowl is perfect for a quick lunch or dinner on the go. Shrimp is a great source of protein to incorporate into your meal prep dish. You will also enjoy the delicious side dishes rice, beans, corn, and salsa!
Ingredients:
- 20 medium sized shrimp (peeled/deveined)
- 1 tbsp olive oil
- 1 clove garlic minced
- 1/2 tsp ground cumin
- ½ tsp chili powder
- 1/4 tsp onion powder optional
- 1/4 tsp kosher salt
- 2 cups cooked brown rice
- 1 cup black beans drained and rinsed
- 1 cup corn drained and rinsed
- 1 cup tomatoes diced
- 1/2 cup cheddar cheese
- 2 tbsp cilantro minced
- 1 lime cut into 4 slices
Instructions:
- In a medium sized bowl whisk together olive oil, chili and onion powders, garlic, cumin, and salt. Add in shrimp and toss to coat evenly. Cover and refrigerate for 10 minutes.
- In a large skillet heat on high for 2 minutes. Add the olive oil and shrimp to the pan. Cook the shrimp on medium-high heat until pink and cooked thoroughly, about 5 minutes.
- Follow cooking instructions for brown rice or rice of choice
- In your meal prep container add rice, 4-5 pieces of shrimp, a scoop of corn, black beans, tomatoes, garnish with cheese, and cilantro. Drizzle with lime juice, or add guacamole. (optional)
